Sticky Prune CakeServes 6-8 Ingredients:Cake

Method:Soak prunes in hot water for 30mins. Drain and roughly chop. In a basin whisk sugar, oil, and eggs until thick and smooth. Stir in flour, bicarb soda and spices. Beat well. Stir in the prunes and buttermilk. Pour the mixture into a greased, lined sandwich tin. (8/9 inches, 23 cm). Bake at 180C(mark4) for 25 mins until firm to touch. Warm the ingredients for the topping together in a small saucepan. Prick the cake all over with a skewer and spoon the syrup over the top. Leave to cool in the tin. Serve with crème fraiche. |
