Green's Spelt and Rye BreadIngredients:
Method:Mix the flour and salt together. Dissolve sugar in 200ml boiling water. Then add 600ml tepid water. Add yeast to warm water. Stir briskly with fork. Leave for 5 to 10 minutes until risen like froth on beer. Pour into the flour mix and mix well with a wooden spoon. Leave to rise in a warm place – till double in size (about 30 mins). Put the dough on to a floured board and knead for 5 minutes until smooth and elastic. Divide into 2 tins (2 lb size) lined with baking parchment. Leave to rise again in a warm place. They should reach above the top of the tin. Bake in oven at 200C for 1 hour. The Rye flour slows the process so don’t rush it, or the top will lift off like a lid after baking! |
